Yellow Rice With Beef Kofta

Ingredients

Yellow Rice
 4 cloves GarlicPaste
 1 Medium OnionPaste
 1 cup Basmati Rice
 2 cups Chicken Broth
 1 tsp Turmeric Powder
 1 tsp Salt
 1 tbsp Butter
 1 tbsp Olive Oil
 Chopped ParlseyGarnish
Beek Kofta's
 1 lb Ground Beef80/20
 ¼ cup Diced OnionFinely
 ¼ cup Parsley & CilantroChopped
 ½ tsp Red PepperPowder
 ½ tsp Black Pepper
 1 tsp Salt
 1 tsp CuminPowder
 1 tsp CorianderPowder
Tahini Sauce
 ¾ cup Tahini
 ¼ cup Lemon Juice
 ¼ cup WaterAdjust for consistency
 1 clove GarlicPaste

Directions

Yellow Rice

Add butter and olive oil to a pan and let it melt

Add garlic/onion paste
Add Salt
Add Turmeric
Cook for 1-3 minutes but don't let it burn

Add rice and mix well
Let the rice fry just a bit don't let it burn

Add chicken broth
Mix well and let it cook on high
wait until water is barely visible in pot
Cover and let it cook on low medium heat for 5-10 minutes

Beek Kofta's

Add ground beef to a bowl or pot

Add: salt, black pepper, cumin, coriander, red pepper

Add diced onion, parsley and cilantro
Mix all ingredients well and let it sit for 15-30 minutes
Make beef mixture into whatever shapes or sizes you prefer
Put onto greased grill
Let it cook for a few minutes on each side until grill marks are visible
Then finish in the oven for 15 minutes (400°F)

Tahini Sauce

Get a bowl and add the tahini
Then add the lemon juice and the garlic paste

Add water then start mixing
Keep mixing and adding water as needed for desired consistency

Once finished, chop lettuce, cabbage, tomato and cucumber as a side on the plate
Add the tahini sauce
Garnish with chopped parsley

Yellow Rice With Beef Kofta

I grew up eating this dish on many occasions. Usually it was at a restaurant, but making it at home turned out pretty good too! The garlic turmeric rice (yellow rice) and kofta recipes originated in the Middle East, but today they are very popular in many Eastern regions. The recipe needs very simple ingredients, but you still get phenomenal and distinct flavors; you’ll love it as much as I do!
